I stumbled upon this recipe online. After doing an inventory of the pantry, I was missing a particular ingredient so I substituted. I also reduced the sugar by 1/3 of the original recommendation and added a healthy handful of raisins. Furthermore, instead of canola oil, I replaced it with rice bran oil, which is way higher in Omega 3.
So here goes:
Yield: 36 mini muffins.
2 c. All Bran cereal or raisin bran cereal
1 healthy handful of raisins - if not using raisin bran
1/2 c. sugar
1 1/4 c. all purpose flour - may use spelt flour as alternative
1 1/4 tsp. baking soda
1/2 tsp. sea salt
1/4 c. rice bran oil
1 large egg
1 c. buttermilk
1 c. fresh blueberries - you may use frozen if necessary
- Preheat the oven to 375 degrees F.
- Grease the muffin tins or line them with mini paper cups (if using silicone, you can bypass this step).
- Toss cereal, raisins, sugar, flour, baking soda, and salt.
- In a separate bowl, whisk oil, egg, and buttermilk. Add buttermilk mixture to cereal mixture and stir just until it is blended. Gently stir in blueberries - so they don't break too much.
- Bake for 15-18 minutes - till the tested inserted into the muffin comes out clean.
