Ingredients:
- 2 cups of split peas (you can soak them while preparing the rest of the ingredients to reduce the starch)
- 1 sweet onion- large sized (any kind of onion will do)
- 3 large potatoes or 6 small- pealed and squared
- 4 large carrots- peeled and chopped
- 1 cup green peas (frozen)
- 3 cloves of garlic
- 12 cups of stock (I prefer to make my stock from 2-3 turkey necks as it yields the most flavourful stock without adding a flavour agent)
- Extra virgin olive oil
- ½ tsp curry
- ½ tsp cumin
- ¼ tsp mustard seed powder
- ¼ tsp turmeric
- salt and pepper to taste (approx. 1 tblsp of each)
In a large pot sauté coarsely chopped onions until glassy. Add chopped carrots and potatoes and cook until potatoes and carrots have softened, stir often to avoid burning. Add 1 cup of split peas and continue cooking. Add a dash of salt and pepper. Add coarsely chopped garlic.
Add stock.
Set aside portion intended for the little one (you can season as you see fit). Continue cooking separately and add ¼ cup green peas. Cook until split peas are soft. Blend with a hand blender until well pureed to ensure baby doesn't choke on any large pieces.
Add rest of salt and pepper and seasoning. Bring remaining soup to a boil. Blend with hand mixer until coarsely pureed- you can allow for some chunks to remain if you like. Add remaining peas and cook until soft, stirring occasionally to avoid burning.
Once the peas are soft, if you used turkey neck to make your stock you can strip the meat off the bones and add it to the pot. Serve hot. Serves approx. 8-10.
